MOM'S HAMBURGER MEAT PIE

1 lb. ground beef
1 onion, chopped fine
1/2 lb. fresh bean sprouts
1 pkg. onion soup
4 pkgs. crescent rolls

Cook meat and onions, drain. Mix with sprouts and soup. Mix soup into crescent roll (flattened). Top with another roll then press edges together with a fork. Can be frozen, wrap individually with foil.

HAMBURGER MEAT'S STROGANOFF

1/2 c. minced onion
1 clove garlic, minced or a little garlic salt substituted for clove garlic
1/4 c. butter
1 (1 lb.) ground beef
2 tbsp. flour
2 tsp. salt
1/4 tsp. pepper
3 oz. can mushrooms
10 1/2 oz. can cream of chicken soup, undiluted
1 c. sour cream
2 tbsp. minced parsley

Saute onion and garlic in butter over medium heat. Stir in meat and brown. Stir in flour, salt, pepper and mushrooms. Cook 5 minutes, stir in soup. Simmer uncovered 10 minutes. Stir in sour cream. Heat through. Sprinkle with parsley. Serve over hot noodles. Makes 4-6 servings.

HAMBURGER MEAT WHIRLS

1/4 c. chopped onion
1 tbsp. chopped green pepper
1/3 c. chopped celery
1 lb. ground beef
3/4 tsp. salt
Pepper
2 tbsp. flour
1/2 c. water
1 recipe Bisquick biscuits

Cook onions in hot fat until golden. Add green pepper, celery, ground beef, salt and pepper. Cook slightly. Sprinkle with flour; mix well. Add water. Cook until thick, stirring constantly.

Make biscuits with Bisquick, roll out to about 1/2" thick. Spread meat mixture over all and roll as for jelly roll. Cut and bake at 425 degrees for 20 minutes.

Serve with hot mushroom sauce made of 1 can mushroom soup and 1/2 can milk.

HAMBURGER MEAT AND PEPPER CORNBREAD

1 tbsp. shortening
1 lb. ground beef
1 1/2 tsp. chili powder
1/4 tsp. pepper
1/2 c. chopped onion
) can tomato sauce
1 tsp. salt
6 green sweet peppers

Sliced in rings, put pepper rings in another skillet. While meat and onions are browning lightly in sauce and when browned, pour over pepper rings. Mix the cornmeal mix and pour over the meat mixture. Put one layer of pepper rings on top and bake at 425 degrees for 20-25 minutes.

AUEA SHINSATO (HAMBURGER MEAT LOAF)

2 1/2 lbs. ground beef
1 round onion
3 c. corn flakes
2 eggs
1 med. sized can whole tomatoes
Salt, pepper, sugar, ajia
Worcestershire sauce

Mix all together. Shape and bake in roasting pan. Bake at 350 degrees for 30 minutes. Drain oil when brown.

Sauce: Tomato soup, 1 can water or more, salt, pepper and sugar to taste. Cornstarch to thicken. Pour over meat loaf and put back in oven for about 15 minutes. Taste gravy before removing it.

HAMBURGER MEAT PIE

1 lb. hamburger
1 can French onion soup
1 can diced potatoes or 2 c. cooked & cubed
1 sm. can sliced carrots or 1 c. cooked carrots
Pepper to taste
No salt needed
2 tsp. cornstarch
1/2 c. cold water
1 can 10 count flaky biscuits

In a large skillet, brown hamburger and soup, potatoes and carrots, liquid in can and all.

Simmer together 15 minutes. Thicken mixture with cornstarch and water. Turn mixture into a 9"x13" cake pan and cover top with biscuits. Bake at 400 degrees for 15 minutes or until biscuits are well browned. Serves 4.

HAMBURGER MEAT SOUP

1 1/2 lb. chopped meat
4 c. onions, cut up
3 c. carrots, cut up
2 c. potatoes, cut up
1 c. celery, cut up
10 c. water
1 c. noodles
2 c. canned tomatoes
1 c. frozen peas
2 tbsp. salt
1 tsp. black pepper
1 tsp. sugar

Brown meat and drain off fat. Add water, seasoning, onion, carrots, potatoes and celery; cook 1 hour. Add noodles, tomatoes, and peas. Simmer for 20 minutes.

HAMBURGER MEAT & PORK & BEANS

1/2 lb. ground meat
1 lb. can Van Camps Pork & Beans

Crumble meat in skillet, season with garlic salt, season salt, black pepper, etc. When meat is starting to brown, add pork and beans. Cook slowly until almost dry and seasonings are well blended, stirring often.

MEAT LOAF HAMBURGERS

1 1/2 lbs. ground beef
2 c. Pepperidge Farms stuffing mix
1 1/2 c. milk
1 tbsp. instant minced onion
1 egg, beaten

Combine all ingredients. Shape into patties and fry in small amount of oil or Crisco (or can be broiled).

HAMBURGER MEAT LOAF

2 lbs. ground beef
1 c. Pet milk
1 egg
1 env. Lipton onion soup mix

Mix all together and shape in loaf pan. Bake at 350 degrees for 1 1/2 hours.

HAMBURGER COLD MEAT

2 lbs. ground beef
4 tbsp. Morton Tenderquick salt
1/2 tsp. onion powder
1/4 tsp. pepper
1/2 tsp. mustard seed
1/2 tsp. garlic powder

Mix well, then mix in 1 cup water. Make into 2 tight rolls. Wrap in foil and refrigerate 24 hours. Leaving in foil, boil 1 hour in water to cover. Drain and store in refrigerator of freeze. For variety, add a couple of drops of liquid smoke.

STUFF ZUCCHINI WITH HAMBURGER MEAT

Zucchini
Hamburger meat, cooked
1 egg
1 tbsp. cornstarch

First you get a big zucchini. Then you steam the zucchini for 15 minutes. Then you take it out. Let it cool off. Then you make a hole in the middle. Stuff it with ground meat. Slice zucchini. Then you make your batter. Beat egg white with cornstarch, then add yolk. Then fry in oil. Then eat it.

HAMBURGER MEAT PIE

1 unbaked pie shell
1 lb. ground beef
1 lg. onion
Chopped green pepper, amount desired
1 can tomato soup or 1 can cream of mushroom soup

Brown hamburger with chopped onion and pepper in skillet. Drain. To this mixture add the can of soup. Pour into unbaked pie shell. Bake 30 minutes at 400 degrees or until crust is browning. Add cheese to top of pie. Let melt. Cut in wedges. A quick meat dish when in a hurry.

HAMBURGER MEAT BALLS

2 1/2 lb. hamburger meat
2 pkg. McCormick meat loaf seasoning
4 eggs

Mix the above and shape into meatballs about the size of a golf ball. Bake at 375 degrees for 30 minutes.

Mix: 1 can cranberry sauce, jellied (not whole berry)

Pour over meatballs. Bake 15 minutes longer.

HAMBURGER MEAT AND SQUASH

1 to 1 1/3 lb. hamburger meat
1 med. onion, diced
2 or 3 med. size yellow squash, cut up
1 can whole kernel corn
1 can mild green chilies
Salt and pepper to taste

Cook in skillet until almost done. Stir often. Add corn, chilies, salt and pepper. cook until done and stir often.

HAMBURGER MEAT BALLS

1 3/4 lbs. hamburger
2 tsp. salt
1/4 tsp. black pepper
1/2 c. chopped onions
3/4 sm. Coca Cola
1 1/4 c. cracker crumbs
3 eggs, unbeaten
1/3 c. catsup
2/3 c. green pepper, diced

Mix eggs, salt, black pepper into meat. Add catsup, cracker crumbs, onions, green pepper; mix well. Then add Coca Cola. Mix well. (This will be somewhat soft.) Form into balls. Place in 9 1/2" x 13" pan.

SAUCE:

1/4 c. white sugar
1 c. brown sugar
1 tbsp. vinegar
3/4 c. catsup
1/4 tsp. salt
1 tbsp. dry mustard
1 tsp. cloves
1 c. water

Mix all ingredients, taking the 1 cup water and rinse all the catsup out of bottle. Cook until well blended. Pour over meat balls. Bake for 1 hour in 375 degree oven.

MEAT FOR HAMBURGER

Many different kinds of meat can be used for hamburgers. If ox meat is used, it is much better passed through the grinder twice. Even beef can be very tough if it is unfattened meat from the range. Certainly wild meats would be better if ground twice. Unless you are on a special diet, lean meat should have a small amount of fat added, to make the hamburger juicier. If you are grinding the meat at home, it is easier to grind if it is chilled a few hours, since many foreign markets sell meat that is very recently butchered. Two of the best cuts are probably chuck and round, chuck is meat taken from the shoulder of the beef and round is taken from the top of the rear leg.

Once the meat is ground, it should not be kept without freezing for more than 2 days. Better to use it the first day and then make up extra into patties and freeze them.

MEAT LOAF OR HAMBURGERS

1 1/2 lb. ground beef
3/4 c. uncooked oats
1/4 c. chopped onion
1 1/2 tsp. salt
1/4 tsp. pepper
1 c. tomato juice
1 egg, beaten

Meat Loaf: Combine all ingredients thoroughly. Pack firmly into an ungreased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan. Bake in a preheated moderate oven (350 degrees) for 1 hour and 15 minutes. Let stand 5 minutes before slicing into 8 slices.

Hamburger Preparation: Omit egg and reduce tomato juice to 1/2 cup. Shape to form 8 patties. Broil or pan fry about 5 minutes on 1st side. Turn; continue cooking 5 additional minutes for medium doneness. Serves 8.
